Clark County is a land of contrasts, from the city of Vancouver to Yacolt, a small town nestled in the Cascade Mountain foothills. Located in Southwest Washington and part of the Portland-Vancouver metropolitan area, the county’s land area is 656 square miles and is bordered on the west and south by the Columbia River.

WSU Extension has a long history of providing education and volunteer opportunities in horticulture, agriculture, 4-H youth development, water quality, and other programs to Clark County residents. We encourage you to explore this site to discover our current programs and resources.

Stocking the Pantry

Wednesdays July 14 – August 18th
6–8 p.m. CASEE Center
A series of six food preservation classes. Classes include basic instruction on preserving foods, equipment needed, resources and how-to tips. Participants will receives instruction publications, resource lists and be able to sample products. Classes will be Freezing and Drying; Jams and Jellies; Canning fruits, sauces and pie fillings; Canning Tomatoes and Salsas; Pickling Fruits and Vegetables; Canning Vegetables, Meat, Fish and Poultry. Living Well with Diabetes

Do you have diabetes? Has your doctor told you that your sugars may be a little high? Come join us for a series of classes that discuss the 5 important test all diabetics should be doing regularly and what the numbers mean, how to select the correct foods and portion sizes that keep your diabetes in control, the importance of exercise, how to eat out successfully and general tips for preventing serious complications.

Jam and Bread Camp for Kids

June 25, 10 a.m. – noon at Bi-Zi Farms
Do you have a child, grandchild or neighbor between the ages of 9 and 12 years old that would like to make some jam and bread? Kids will learn how to make freezer jam and make a loaf of bread ready to take home and bake. Learn more.

Pressure Gauge Testing Schedule

Dial gauge pressure canners must be tested each year for accuracy. Master Food Preservers will be holding several pressure gauge testing clinics this summer. Click on the link above or check out the calendar for the dates and locations.

Don’t find you have an inaccurate gauge and have unsafe food preserved for eating this winter!!!
